Fuchu Shiraito ~fuchu shiraito~ is a chilled cold buckwheat
noodle dish inspired by the Shiraito Falls in Shizuoka
Prefecture.
It replicates the dynamic flow of Shiraito Falls, which is
depicted with white noodles that lift up golden powder, along
with the famous Shizuoka ingredients of whitebait and
wasabi-infused grated daikon radish.
The dish also includes fried tuna (caught in Shimizu Port)
coated with roasted green tea, fried sea bream (locally
caught) coated with matcha, fried eggplant coated with brown
rice tea, and cherry shrimp. It offers a taste of Shizuoka's
blessings all on one plate.

[About "Golden Powder Noodles"]
These are yellow noodles made with locally produced kinako
(roasted soybean flour) in Shizuoka Prefecture. Legend has it
that when Lord Tokugawa Ieyasu visited a gold mine, someone
playfully presented him with "kinako mochi sprinkled with gold
dust," and Lord Ieyasu was said to have greatly enjoyed it.
Hence, these noodles were named "Golden Powder Noodles" in
honor of this anecdote.
[Origin of the Menu Name]
The name "Fuchu Shiraito ~fuchu shiraito~" is derived from the
Fuchu area, one of the 53 post stations along the Tokaido
highway, and it pays homage to the ukiyo-e (woodblock print)
titled "Fuchu Abekawa."
